Asian Inspired 5-Ingredient Asparagus
- 1 to 1.5 lb. tender, young asparagus
- 2 T. low sodium soy sauce
- 2 T. sugar
- 2 T. olive oil
- 2 T. sesame seeds or cashews, can be optional
Cut stalks diagonally in 1-inch lengths. Place in a strainer that will submerge into the pan of boiling water. Bring water to a boil and lower asparagus in. Blanch for 3 minutes then cool immediately by plunging into cold water. Let sit and cool while you assemble the dressing.
In suitable bowl, mix together soy sauce, sugar, olive oil and cashews. Transfer well-drained asparagus to this bowl. Toss asparagus in dressing mixture and refrigerate for 15 minutes. Stir asparagus in dressing occasionally to ensure a fresh coating of the dressing and chill for a minimum of an additional 15 minutes. Can be made ahead by a day. Excellent as leftovers.
